Origins are where the dessert is generally agreed to have come from; several are claimed by more than one country and the entry names the region rather than picking a winner.

How this list was built

The list is not just cake. A random dessert list that returns nine kinds of American cake is no help when you are deciding what to make. This one runs across Europe, the Middle East, South and East Asia, Latin America, Africa and the English-speaking world, and includes fried things, set custards, shaved ice, milk puddings and things you assemble in a glass.

We say what is in it, because that is the question behind the question. Most people pressing a dessert button are deciding what to cook tonight. Knowing that panna cotta is cream, sugar and gelatine — and that basbousa needs semolina and yoghurt — settles it faster than the name alone.

Contested origins are named as regions, not awarded. Baklava, halva and rice pudding belong to whole regions and have been argued over for a long time. Where the honest answer is “Turkey and the Levant” or “Northern Europe”, that is what the entry says.

Nothing on this list is invented. Every entry is a dessert people actually make and eat. We have not padded the list with plausible-sounding names to make the number bigger.
